Vegan Eggs

I made Vegan Hard Boiled Eggs!

This is a vegan hard boiled egg that I made using mainly soy milk for the white and potatoes for the yolk.  The texture is very similar to a real hard boiled egg and looks very similar!  I unfortunately cannot claim credit for inventing these, I found a recipe for them on a really great blog:
